Hamburger Soup
My mom made this soup all the time when us kids were growing up. It’s hearty and delicious.
1.5lbs ground beef
1 medium onion, chopped fine
1 28oz can diced tomatoes
2 cups water
1 can tomato soup (homemade if I have the extra time)
4 large carrots, chopped fine
3 sticks celery, chopped fine
Salt, pepper to taste
2 tsp parsley
Bay Leaf
8 tbsp barley** add extra water
Brown beef onions. Combine remaining ingredients in large pot except barley. Let it come to a boil on medium heat. Add barley with extra water (usually ½-1 cup depending on how think you want the soup).
Simmer covered for 40 min. Stir and watch the barley as it can burn super easy to the bottom of the pot! I usually serve with my biscuits.
